Tonkatsu (204)

I type this with blurry eyes. Buddy woke up at 4:15 AM, asking for "chicken and rice" since he didn't eat much dinner the night before. I went to the kitchen and like any other good, kind, caring bento-minded mother woken up at 4 AM would have, gave him a wonderfully nutritious and beautifully prepared breakfast: chopped up microwaved hotdogs. LOL

Did I have you going? I suggested everything from Cheerios to strawberries to pancakes to grapes to peanut butter whole wheat toast. He wouldn't have any of it while he waited for the rice to cook so that I could make him some Costco chicken fried rice, so that's what he ate. And then when the rice was ready to fry, he was "full" and wanted to watch tv. Typical toddler, living in the now, which changes every 5 minutes.


Today I'm having tonkatsu. I had meant to cook some chicken I didn't get a chance to use over the weekend and try chicken katsu in a different way, but fell asleep putting the kids to bed. This looked a lot better before the sauce all oozed together, but unfortunately I took too long to take the picture. The katsu is cut into small pieces, there's rice underneath, and the asparagus lays nicely on top.


In my second tier I have a salad. I topped it with some Costco chicken so that I didn't need dressing, but I might go trolling into the work fridge and see if there's some healthy dressing I could sprinkle on.

Someone commented yesterday with a really great link to a blog post by Biggie on how to do thin omelets in the microwave. It made me think back to when I had lots of time to read everyone's blog and see all the great lunches and I really miss doing that. Biggie has such a wonderful, helpful blog and if I ever get around to constant reading again, hers is definitely on the top of the list. When I first got into bentos a year ago, hers was always a favorite of mine. Please take a look at her site if you haven't seen it yet. ^_^

Pork Tofu (202)

With Mr. Pikko and Baby Girl off to a lesson on Saturday, I trucked Buddy off to the supermarket to buy vegetables for my soup. I ended up trying the first Garden Vegetable Soup recipe I found. Though I didn't need any, Buddy would not stop furiously pointing at the "brokko zee" until I picked up this one tiny little stalk that got broken off and gave it to him. This did not satisfy him because after I handed it to him, he demanded "BEEG WUN!" but then I put it in a bag and suddenly it was like, Magical Bagged Broccoli Extraordinnaire and we were able to move on.

Having not made a soup in quite a while, I opted for the whole head of cabbage instead of the conveniently cut-in-half ones. I figured, the recipe said "half a cabbage", so I just bought one, thinking I'd just go double.

I do not recommend this unless you want a pretty good vegetable soup with ASSLOADS of cabbage in it. No, seriously. It tastes pretty good, kinda like the Campbell's Vegetable Soup (which I love) but with enough cabbage to kill someone. I looked at other recipes this morning and found that you're supposed to use 2 cups cabbage. Great. Good thing cabbage is cheap. I used vegetable bullion and don't have nearly enough soup for the vegetables, so I'm kinda stuck eating mostly heaps of cabbage for the early part of this week so that at the end of the week, I can have a nice soupy soup. Next batch, I will use beef bullion, cause I had to add some extra salt this round.


I made Pork Tofu this past weekend. Grandma J makes a really good non-spicy Mapo Tofu and I use this recipe as a substitute for when I want some. It reminds me a lot of the Pork Tofu dish that Y's Lunch Shop used to make on occasion. Let me tell you, that dish was made in heaven. Whenever I saw they had it, I bought it. Mine totally pales in comparison, the only thing similar is the look. I think maybe when the wedding comes around, I should beg my friend to bring me some Y's before she drives over from Hilo side. The last time I went to my cousin's wedding in Kona my aunty did that, bringing us musubi and fish. I'm drooling right now just remembering it.

Anyway, this is Pork Tofu with some diced carrot on top for color and my brokko-zee.


We bought champagne mangoes at Costco yesterday but I need to go get credit for it or something. I cut them open and they were black in the middle. These ones were the third mango I peeled and though it was still black, I just cut that part out. Added some strawberries in too, sliced up for easy eating. ^_^

I never did post more pictures of my wheat grass! It's dying by now and I had to toss most of it out due to mold, but I will try again and this time will harvest them as sprouts as they look in this stage here:


They were actually pretty sweet and tender at this stage. Right now my last tray of grass is really stringy and tastes like... well, grass. The sprouts were much better. I still have a huge bag of berries, so I think I'll just grow a batch, harvest sprouts fresh from my desk at work, and then start over. It's really quite fun!!

Miso Pork (195)

I thought I had it all figured out last week when I skipped bentos in order to have my 200th bento timed right in time for the day after Easter. But then yesterday I woke up and immediately yakked and stayed home. The one day I made my bento the NIGHT BEFORE (OMG OMG OMG!) I end up sick. I guess me being on time just disgusts my body and this started some kind of inner revolution. So anyway, this was yesterday's bento. I also did not take Good Friday into account. So while I was supposed to have bentos 195-199 done this week, alas, there is a little fly in my ointment.


I made miso pork on Sunday, though this time I put sake and I could really taste it. Since the kids had been throwing tantrums on an hourly basis I drank some of the sake while cooking. Bwahaha!

Okay, that was funnier on Sunday.

I despise the way the pork looks in this picture and it looks that way because it was refrigerated overnight. It looked much more golden brown and attractive when I first made it Sunday. D: Underneath it is the healthy rice I mentioned last week. I sliced up a piece of takuan and tucked it into the section with some cucumber pickles. Lastly I have garlic salted asparagus spears pan fried in olive oil.

I've decided to join Weight Watchers again after Easter. Next Monday will mark 2 months before the wedding and I'm basically 130 right now. My eating habits have really slipped and so I'm hoping having the online tracker at my disposal will once again put me back on track and help me kick off that last 10 pounds. My problem is usually dinnertime and weekends. That and my new weakness for curry ramen. ; ;

I know a bunch of you watch Lost and that you all might agreed the Desmond episode was highly emotional and probably one of the most tear jerking so far. Well that was true before last week's episode, Ji Yeon. My butthead husband figured it out about 15 minutes in, so I didn't have that fuzzy "Oh I'm so stupid to not have figured it out!" feeling. That didn't matter though, I still cried my eyes out. I'm not sure if it's because Sun is Asian and that makes me identify with her more or something, but damn did that scene break me down! I even watched the ending again last night just to find out if it was still that raw and sure enough, Niagra Falls again!



I love, LOVE the new, slow piano theme they play lately. *sigh*

Stuffed Aburaage (192)

I'm a bit disappointed in myself for not doing a Girl's Day bento and for not doing a bento to enter into the FFXI Fan Art contest. I had thought about doing it but kinda just lost track of it and now I wish I'd done one. /wrists

This is bento #192, which means that in a couple of weeks I will have reached the big 200. I'm still thinking of what to do, but have narrowed it down to two ideas. I might end up scrapping both and just making regular food nicely arranged, I dunno.


Today's bento was a little hard to do because it involved a lot of thinking. Grandma J stuffs triangles of aburaage with pork to make this dish and they turn out looking basically like cone sushi but with pork in it instead of rice. It tastes really good, but it's a very awkward piece of food to arrange nicely. I had meant to do this bento last night as I keep telling myself that the reason we're late in the morning is because of my lunches, but I had to think and think and think. I finally settled on slicing it up like a mini meatloaf and that turned out working really well.

I mixed the small amount of rice with some ume furikake and had made it into a round ball, but it didn't fit well so I mashed it around to just sit there as a bunch of rice. I sliced one asparagus spear to arrange. These pieces gave me a lot of trouble! :( I added takuan and pickles to the side and then raspberries in the last section. This box is great because it's split into 3 spaces, which I love. When I was at Shirokiya the other day I wanted to buy a Ms. Bento but they don't sell them anymore and even worse, all their pretty boxes are gone too. :(

Mapo Tofu

It was the strangest thing this morning. Pigs were flying around in the sky in droves! I was confused for a bit, then I realized that they were out because the University of Hawaii announced this morning that Greg McMackin is our new head football coach, meaning that UH... ***UH*** hired someone in 9 days. This my friends, is a miracle!!

The flying pigs make my bento today very fitting because 1) it's got pork in it and 2) it went flying.

I love my MIL's mapo tofu because it's tasty, moist, and not spicy. I added shelled edamame and grated carrot for color so that put together with the pink container, it would make the food look more attractive. Unfortunately, when I took it out to the car, I made the fatal mistake of placing the bento box onto the top of the car where I ALWAYS forget things.

We didn't hear it fly off so I don't know where it is, but this box is presumed lost which makes me so sad because it was a wonderfully shaped box and one of my matching Putifresh containers. I'm hoping that it is just sitting nicely in our parking stall at home, but I won't kid myself. **sigh** I didn't even figure it out until I got to work. Clearly I accidentally packed my head into my lunch this morning along with the food.

I think to console myself I will have to go down to Marukai and buy myself some new bento goodies. Bwahahaha!

Stuffed Aburaage (162)

Yesterday morning my cousin Jennifer e-mailed me to say she'd missed her flight to Honolulu and that she needed to find a hotel to stay. I ended up offering to pick her up after the radio show and letting her stay the night. We had a nice night talking at Zippy's and laughing at the kiddies who apparently were high on the idea of Aunty Jennifer coming over. Baby Girl put on a Christmas singing show and at the end of one song did a shaka. She sang the song again and her shaka was taking on a weird form and we were like, what is she doing? Then suddenly she does what she wanted, which was to have only her thumb, pointer, and pinky pointing up. Then she screams, "ROCK ON!!!!!!" We almost busted our sides open laughing!!

While we were talking she mentioned a co-worker of hers that reads my blog every day. Hi Christina! Thanks for reading!! ^_^


Today I'm eating stuffed aburaage. Aburaage is fried tofu skin and the stuffing is made out of pork. It's my mother in law's dish and something that doesn't smell so great, but tastes really yummy. On the side I have some white rice and stewed carrots. I added the shelled edamame and a little sprig of parsley for extra detail.

I've been slowly but surely going down in weight, probably because I've been really good about portioning lately. My other cousin Stef heard I've become really skinny and told me I need to eat food but as you can all see here, of course I eat food. lol My best friend's wedding is at the end of May, I'm pretty confident that I can be at my goal weight of 120 by then!! YaY!

I will have no bento tomorrow as we are going to have a Christmas lunch for work.

Pork Tofu

As any Hawaii resident knows by now, the University of Hawaii Warriors are the WAC (Western Athletic Conference) Champions!!!! The game against Boise was last Friday and it overtook the Fresno State game I attended years ago as the most adrenaline pumped game I've ever attended at Aloha Stadium. There was a point during the game when the stands were just electric and the shouts and screams were deafening. It was truly magical to be there. This picture will be too big for my blog, but I wanted to put it up anyway:



We started chanting B-C-S and that gave me chicken skin! I feel so good for Colt and so happy that he came back. The season was looking kinda bleak with the injuries and all but now it just seems like this was all he could have hoped for. Baby Girl got into it too. I'd hoist her up and her job was to scream and wave the shredded ti-leaves we had. I can't wait for this week's game. GO BOWS!!!!

Last night I had to make something that I thought Buddy would gobble up because he's sick and hasn't been eating much so I made pork tofu. It was a lil lacking in taste so I think next time I'll use Kikkoman instead of Aloha. I'm also out of onion powder so I need more of that... It's the only way I can sneak the taste of onions into food because Mr. Pikko has the Ultra Onion Detector 3000 built into his tongue.


It looked real plain, so I picked some of my last green onions and cut them up with my scissors. When we had severe rains a couple weeks ago I looked out at my plants to see my poor green onions floating in a pot of water. They're still alive though, miraculously.


A KCCA salad, yay. This was all nice and good until I realized that I forgot to pack LETTUCE. hahahaha! So I guess I'm having this as sides instead of a salad. Good job, me!

Pork Chop!

YaY! Bentos are back! Well, only one for this week like I mentioned, but hey. Better than nothing!

My trip was ten kinds of awesome. I got to meet hundreds of people, signed 3 autographs, took pictures with Square Enix big wigs, and got to watch the UH vs. Nevada football game at the ESPN Zone restaurant in Downtown Disney with some random guy who JUST so happened to be from Mililani. He was even on the same plane ride home as me. Hawaii: too small! I don't know what his name was, but I thank him for being there. Watching those last two kicks wouldn't have been nearly as fun if he hadn't been there pacing around and jumping and screaming with me!


Today I'm having leftover pork chop with cabbage and rice. On the side I have a salad with some fancy pants greens that my MIL says she bought at Sam's Club. They're really yummy!! In the little blue container I have some Catalina Free dressing.

Tomorrow of course, is Thanksgiving. I'm going to try out a recipe for potato salad from the Harumi Kurihara book that I got. We're ordering from Zippy's this year, so I'll let all you Hawaii folks know how that turns out. Last year we ate from The Willows and not sure if I'm remembering right, but I didn't like their sides at all. I don't remember the turkey. That must be bad right? lol

Friday is Black Friday and although I was going to skip it for Wings of the Goddess, the PC version of the game got messed up and won't be here until tomorrow or Friday. I'm going to try my luck at CompUSA tomorrow night. If not, I will brave the BF crowds at Gamestop. I have no idea how their stores are on BF, but I guess I'll learn won't I??

Ige's Shoyu Pork (147)

I had another training session this morning and during that I found my first ever white hair!!! Proof that Fan Fest, The Mog House, and bento store orders are totally stressing me out!! lol I'm actually a little excited about it because I could only find one, so I'm going to call it my lucky hair now.


Last night my in-laws bought food from Ige's, something that Mr. Pikko has been wanting to try for forever because Bobby Curran on ESPN advertises their shoyu pork all the time. The taste is really good, but the food wasn't that hot when we got there, so it was a little on the hard side. I'm sure if you eat it at the restaurant it's much softer. To go with it I made two little animal onigiris, one rabbit and one bear. On the side are fresh tomatoes from my plants outside.

For my bottom layer I have persimmon and some jabon along with a tangerine to snack on later. Actually I should speak in past tense because I've already eaten all of these things as I type this. In addition to the training I had another job interview and guess what.

Mrs. Pikko has a brand spanking new job offer!!! :D I got along fabulously with the boss lady and she offered me the position right there. I of course had to discuss things with Mr. Pikko so I will let her know by Tuesday. YaY! I'm so happy because it looks like a really fun place to work with great people and lots to do. Family friendly, flexible schedule, and of course most importantly, a boss who LOVES UH football just as much as I do. LOL!

Gawd that stress off my shoulders is an immense relief. -_- Now I can buckle down, get this festival and expansion past me, and life can finally get back to normal.

Teriyaki Pork and Pomegranate Salad (144)

Me and Baby Girl went to Costco on Saturday before the reeeeally soggy weekend kicked off and boy did me and her go fruit crazy. We bought a huge tub of big blueberries, persimmons (which we tried in store), a set of 4 pommelos, and a tray of gigantor pomegranates. Pomegranates are one of my favorite fruits to eat and each tray had 6 mega big ones. I was scared I'd waste a couple, but I ended up eating 3 this weekend alone, hahaha!! No need to worry about fiber now!

I'd seen a recipe by Nigella Lawson where she combined pulled pork and pomegranate seeds, so I thought I'd try something similar with the leftover teriyaki pork chop from last night's dinner.


I sliced up the chop cold this morning and arranged it on top of an entire romaine heart head of lettuce. I added some of my tomatoes (which are backing up) and then sprinkled pomegranate seeds on top. It added a nice bit of color and I was pretty happy with the way it looks. I didn't pack any dressing as I don't think it'll be necessary.

It rained and rained and rained and on Saturday night it was thundering like crazy. I just so happened to peek out at my plants and saw that the rain was coming down so hard that my green onions had been uprooted and were floating around in rain water 3 inches thick. lol I'll have to make some tamagoyaki to save them from being wasted.

Being rained in, we decided to clean house, which meant I had finally run out of excuses to start folding the laundry in the crib, where we have been dumping clean clothes for the last 3 months or so. After at least an hour, I still hadn't dented it, probably because I was folding like 200 little shirts and onesies which took up very little space. I did learn that we could forget to do laundry for the kids for a month and they'd still have enough clothes to wear.

I also baked two pumpkins in order to make fresh pumpkin pie. I went to Foodland to buy some pie crusts, came home, baked the pumpkins, then realized that I did not have ground ginger. Cursing myself, I put the pumpkin pulp away where it will probably rot before I have the motivation to make it into a pie again. I had used another Allakhazam admin's blog post about roasting the pumpkin and there's this one part where she mentions that cutting the pumpkin in half is "hard". This is apparently the way Alaskan people say, "You need a freakin' AXE to get this pumpkin open." Really, I'm surprised I have all my fingers today.

Fan Fest is next. freakin'. week. After working all day Sunday on my costume, I realized that I wasn't going to have enough time to finish it. *SIGH* I have to work on something else for everyone and the briault is just not going very well, so I have to abandon it. *sob*

Furikake Wasabi Salmon (102)

A few months ago my mother in law had brought back from one of her sorority group meetings a recipe book that contained all of their best recipes. She's been trying recipes from this book this week and last night tried an easy microwavable Furikake Wasabi Salmon. The salmon steaks are topped with mayonnaise, wasabi, drizzled with Mr. Yoshida's sauce (this is a brand of sauce), and then sprinkled with Aji Nori furikake. I did not eat this last night as they'd also bought some pork eggplant and beef with black beans that I couldn't resist. I just love eggplant dishes so I ate mostly that for dinner!


I didn't take much rice, so this will only count as 1 point. On the right side I have more of the above-mentioned eggplant and some of the bell peppers from the beef dish. The eggplant was rather oily from the pork, so I'll add another point on for that. The salmon was a bit oily too, but since this oil came from the salmon itself, I count that as a healthy oil. The mayo I will add another point, which brings this to a 3 point lunch. By the way, the (102) is the number of my bento. I need to keep better track!

I went to Marukai yesterday and learned it pays to scour every aisle up and down for things. Their bento accessories section has been lacking for the past 3 trips I've made down there but this time I was able to score on some really cuuuute bento boxes!! I've used it in today's lunch and here it is all covered up:


Isn't it beautiful!? A complete steal at $1.99! And best of all, it's made in Japan. With all the China recalls lately even I am getting paranoid about all China products. I saw a lonely four boxes hiding in between stacks of silly useless looking plasticware. I snatched them all up! I will sell one on eBay and have two to sell for $2.99 in my store, though I haven't taken a picture. Actually, if you're interested in it, you can simply e-mail me at pikkopots at gmail.com and place a reserve on it, then pay with PayPal once I confirm I still have it available. I have a matching drawstring bag for both of them, also $2.99. I took the photo on a matching furoshiki that I found buried under a box. It was only $.99 because it was out of the package and dirty and gross. I figured I can always wash it...

I also got another good cheap find yesterday. Today Baby Girl needed to wear a certain color and she didn't have it, so we went to Ross after leaving the in-laws. I found a set of red and blue silicon baking cups for $3.99! That's a lot cheaper than the $8.99 ones I saw at Walmart and at least this one had two colors! So yeah... very happy. I also bought a walking at home exercise DVD because Mr. Pikko has expressed concern about me running in the dark.

Speaking of the store, I added in more of the Hello Kitty stuff again as well as some additional accessories. I have a crapton of bento supples to sell in the store at home but am just too lazy to put a lot of it up. Amazingly, Mr. Pikko, who calls everything to do with any of my hobbies my "junks" refers to my bento stuff as "bento stuffs". Maybe he silently approves??

Tomorrow is the big day! Our first football game of the season! I bought Buddy a #15 toddler shirt and Baby Girl a UH windbreaker jacket so that she wouldn't get cold wearing the cheerleader outfit. This is our first year with season tickets so I really hope that we are sitting in a family friendly area. We bought staff tickets which should up the chances of getting seats by old timer football fans. I just hope they don't mind kids. So while I'm talking about football, I should mention the horrifying new haircut that Colt Brennan has.


Dude, we get you love Hawaii, but who got you drunk and took you to the barber? I suppose it's still better than the dreadlocks though... Also, unless he plans on looking at his feet everywhere he goes, when he puts his head upright the Hawaiian islands are upside down... Oi ya yoi!

I'm looking forward to our first football bento. I think I will pack cone sushi, dashimaki tamago, spam musubi, and hash patties. There will be 6 of us there with the two kids. We'll see if we actually get to watch the game or if this will be another season of "I want to go walking." and "I want a smoothie." Hopefully they have andagi this year!

Leftover Chinese

My family ordered out Chinese food last night so it was a good thing I'd had an all Core day because it's very easy to overeat Chinese food. We ate from Waimalu Chop Suey and though a couple dishes weren't so great, the others were more than tasty enough to make up for those and the gau gee was so freaking gigantic it was like eating a whole one even cut in half.

Today's lunch is pretty drab, I'm basically just showing you what I'm eating. I wish I could have presented it better, but there's not much else to it. There's a mixture of a bunch of veggies as well as some pieces of chicken, beef, and pork. I took mostly vegetables as that's a good way to keep your calorie intake down when pigging out on Chinese food. Or at least, I like to tell myself that. I usually load up on tons of broccoli, won bok, ong choi, carrots, and then start picking lean meats and then last of all noodles.


I'm still trying to get my Yeah! bon dance video imported to my computer, but turns out I need a special cable, which I hope to get today. I watched it again last night on my camera and it's so hilarious.

Next week Tuesday I have a "brown bag" meeting so I will have to come up with something that looks yummy so that I can have a great lunch to talk about. I'd never even heard of such a thing, so I was pretty thrilled!

I have a few things to add to the store, but I haven't had the time to add them yet. I hopefully can get that done tonight. I have some nice 3 tier picnic bento boxes available as well as some nice small circular boxes good for packing sushi for lunch. Mr. Pikko took vacation today so I may end up going to Marukai this afternoon.

Pot Roast Pork

I had wanted to do a Harry Potter bento for bentochallenge but I just haven't felt the inspiration and last night I was bummed out over something so I ended up just watching King Kong and doing my bento this morning. I am definitely getting better at that by the way. We still end up late, but not as bad as before. Yay?


This is some pot roast pork leftover from dinner last night along with a bit of rice, some poke, and green beans. 3 points for this lunch: 1 for the rice and 2 for the meat since I couldn't get all the fat to come off. My bottom layer is here:


Tofu cubes and some shelled edamame. The last time I had tofu cubes my buddy Exodus made a comment, "Oh, tofu cubes, neat. What's it made of?" LOL! You crack me up, cheese man! I'm not really feeling all that wordy today, so I'm just postin' the lunch and gonna hele on out to frolic on the internets while I do work.

Zaru soba & miso pork (again!)

Dinner last night was something new, a yummy pot of cream of mushroom chicken with potatoes and onions. Unfortunately, scared of the potential points value of the cream of mushroom, I did not bring some home with me. I took the leftover-less opportunity to make today's lunch zaru soba and the last of the miso pork, which was oddly frozen into the shape of Cro Cop's twisted foot. O_o?

The soba is thankfully a Core food, so I don't have to worry about that part. I cooked up some soba sauce from a recipe I found on About.com. I took a taste and it's quite yummy! The recipe made me enough sauce for probably the whole package of noodles, which works out quite nicely. I don't have any pretty sauce containers, so I didn't take a picture of the ghastly looking thing I used. (a First Years baby bowl, which purposely does not give you matching covers)


For some reason when we got home last night I wanted to splurge on something. I'd gotten away with a 3.5 point day, so I decided to spend my points on... rice. Haha! I'm indulging in rice. I can't wait to get to my goal weight so that I can finally eat all white rice again on a daily basis. I cooked one cup of rice and took half for my bento. The other half... well... that is going to into my sinful breakfast of egg rice with microwave nuked hot dog. 99% of you are likely thinking, what the hell is egg rice?

It's rice with egg, duh!

Select Hilo natives know wat I stay talking about. You take one bowl of hot rice an' crack one raw egg ovah em. Den you mix em up wit like one teaspoon shoyu an' den top wit one 15 second-nuked hot dog chopped into fours. Some ono let me tell you!

Ok the pidgin is over, my mainland readers can stop the head scratching now. Perhaps I'll post a picture of it later. I doubt any of you would try it and like it. Egg rice probably falls into the mainland "Ew they eat Spam" category. Anyway, the bento consists of miso pork, rice with ume, green beans, and sakura carrots. I put the meat into a foil like cupcake cup. Hopefully I won't repeat what I did with the meat loaf garden, which was to press "Reheat" and then walk away only to remember after 5 minutes of microwaving that I'd lined the bottom with aluminum foil. Oops!!


I have a ton of dishes tomorrow, 4 in all since I'm taking the sauce plus a fruit container. Sometimes it seems like I'm eating more than I ever was, but I'm finding that bentos are great to help with portion control and food group balance. Says the person who will be rice gorging today... With the two cups of rice being 4 points each, the hot dog, and a cheese wedge it's going to be a 10 point day after lunch. D: Oh btw, I bought a bag of mini Babybels at Costco tonight (after hearing Kaolian rave about em) and I have to admit the wedges taste a lot better. The Babybel is more sour. Good news is Baby Girl loves them. But then again, she's like Exodus and would eat a shoe if it had cheese on it.

Miso pork salad w/ avocado

After a very naughty calorie Sunday at the zoo, I had to pack something very Core for today. I'd marinated some pork in a miso mixture earlier in the day and broiled it that evening for dinner. The kids were making demands every .25 seconds, so I ended up over cooking it and the pork was pretty much like 2 cm thick jerky. :( Still, it tasted good and the burnt parts were very flavorful. We had two pieces leftover, so I sliced them both up and froze one for a future lunch. The other set went on top of a bed of thinly chopped romaine lettuce heart (1 head) along with sliced avocado and grape tomatoes. I topped it off with a sakura shaped mango slice that I had left over.



Doesn't the pork look great in the picture? :) No dressing needed as I can eat the meat and avocado with the lettuce as taste. I made a fruit bowl as well with mango, blackberries, kiwi, and a Laughing Cow Light Swiss wedge, but I didn't take a pic as it looks pretty much the same as all my fruit bowls. This was a quick one, about 20 minutes total. I'm getting faster!

I won a bento box on eBay yesterday. Only 2 dollars! The shipping is costing me $5... so mental. Weight loss this week: 2.2 lbs! Weight Watchers congratulated me but gave me a finger wagging, saying that more than 2 is too much. This can mean only one thing... MOAR FOOD! Woot!
